Apple drops patent claim against Samsung Galaxy S3 Mini

The Samsung Galaxy S3 Mini will not be involved in the next round of the never-ending Apple vs Samsung patent war.

The little brother of the flagship Galaxy S3 had been named alongside a host of Samsung devices which, according to Cupertino, infringe Apple's intellectual property.

The warring companies had been asked to present their lists of disputed devices as they gear up for a second trial in California, scheduled to begin in March 2014.

As the Galaxy S3 Mini is not being sold in the United States, Apple has sportingly agreed to strike it from the list.

Round two

However, it's not as if Samsung will be doing cartwheels about the news. Apple's list still includes the Galaxy S3, Galaxy Note 2, Galaxy Tab 8.9, Galaxy Tab 2 10.1 and Rugby Pro devices.

Apple also reserves the right to reinsert the S3 Mini if Samsung decides to launch it Stateside.

The second trial, which follows Apple's crushing victory this summer, will also hear Samsung's claims about the iPhone 5.

Google removed more than 50 million links in 2012 search crackdown over piracy claims

Google, the Internet search leader, removed more than 50 million links from search results this year for allegedly infringing the intellectual property of copyright holders.

According to an analysis of Google's weekly "transparency reports" performed by TorrentFreak editor ErnestoVan Der Sar, 51.5 million links to web pages allegedly infringing on copyrighted material were removed from search results in 2012.

"Nearly all of these web pages are no longer showing up in Google's search results," Van Der Sar reported.

Google, like any other website on the Internet, is obliged by federal law -- namely, the Digital Millennium Copyright Act -- to take down content when it receives a DCMA request from a copyright holder.

Van Der Sar noted that DCMA takedown activity has been increasing throughout the year, hitting a high point last week when Google received 3.5 million requests.

Google

Much of that takedown activity is being fueled by automated systems used by large copyright holders. Those systems can be wildly inaccurate, which can lead to lawsuits.

For example, an online storage service called Hotfile sued Warner Bros. Entertainment after that company's automated system flooded Hotfile with thousands of DCMA takedown requests for material Warner had no rights to.

Under the DMCA, any person making bad takedown requests can be penalised with monetary damages. Warner's defence in the Hotfile case is a person didn't make the bogus requests. A computer did.

Media companies, like Warner, are among the most prolific requesters of takedowns.

The biggest requester in 2012, Van Der Sar points out, was the Recording Industry Association of America, which asked Google to remove more than 7.8 million links from its search results.

The website most frequently targeted by rights holders was FilesTube, according to the TorrentFreak editor. More than 2.2 million links at that site allegedly infringed on copyrights, he noted.

"While this is certainly a significant number, it?s less than 1 percent of all FilesTube pages indexed by Google," he wrote.

Copyright holders aren't the only entities pressuring Google to remove links from search results.Governments do so, too. More than half those requests are made for concerns over defamation or privacy and security.

However, governments are interested in more than just taking down links from the Internet. They're also interested in obtaining information from Google that it has about its users. That trend, too, increased over 2012.

Melvin Guillard survives Jamie Varner slam but loses UFC 155 bout

Melvin Guillard and Jamie Varner staked a late claim to the UFC 155 Fight of the Night bonus with a bout that ended in a split decision. Varner won it on the judges' cards, 30-27, 27-30, 29-28.

Varner gained an edge early in the bout by tagging Guillard in the first round. Guillard showed good kicks, but couldn't escape Varner's takedowns for much of the bout. But the most frightening moment of the bout came late in the third round.

[Complete UFC 155 recap: Cain Velasquez mauls Junior dos Santos]

The two were scrambling on the ground for position when Guillard took Varner's back. Varner stood up, and with Guillard's head pointed to the ground, Varner slammed his opponent to the ground. Amazingly, Guillard was not knocked out or injured from the move. The fight ended seconds after, and the two embraced.

?This was a very emotional fight for both of us," Varner said after the bout. "After what happened a few weeks ago at the "TUF Finale" event, we were both ready to compete. I knew we would eventually get in the Octagon and squash our beef and I definitely feel that we did. I?m happy about my performance, I feel that I was able to dominate the fight wherever we ended up and I?m glad I got the win.?

Varner and Guillard were originally scheduled to fight during "The Ultimate Fighter" finale on Dec. 15, but illness kept Varner from the cage. Guillard was understandably upset about the delay, leading to trash talk.

Nigeria rights leader blasts journalists detention

LAGOS, Nigeria (AP) ? Nigeria's National Human Rights Commission has criticized the nation's secret police for detaining two journalists for days without charges.

Commission chairman Chidi Odinkalu issued a statement Saturday saying the detention of Musa Mohammed Awwal and Aliyu Saleh, journalists with the weekly Hausa language newspaper Al-Mizan, did "not pass constitutional muster." Odinkalu called on the secretive State Security Service to allow commission staff to have access to the men, as they've been denied opportunities to meet with the lawyer or receive medical attention.

The two journalists were arrested early Monday morning at their homes in Kaduna. Their newspaper has published a series of stories about alleged military abuses and the radical Islamist sect Boko Haram.

Boko Haram is waging an increasingly bloody guerrilla fight against Nigeria's weak central government.

harshhaswani0: I think I need anger management. Advice?

Folks, I've been separated for nearly two months and I'm now working on self-improvement.

One area I identified that I need to work on is managing my anger.

My husband would bring out the monster in me. No, I would never throw things or hurt anyone in the process, but I'd drop a few F-bombs here and there and I'd certainly get LOUD.

Thing is, I generally don't have a temper. Most of my friends, even childhood friends, would be surprised if they were told that I have a temper. But I do.

People who know me too well and know how to push my buttons unleash that ugly side of me. My dad, my mom sometimes, and now my husband. I thought my temper problems were done with. That I was just an angry teen. That I'd overcome it. Apparently not.

Thing is, I'd been to individual counseling for an extended period of time before I got married. So I'm not sure that that's the route to go.

Does anyone recommend any self-help books or techniques to calm me down when I sense getting frustrated to the point of losing my cool?

Thanks in advance<3

Senate renews warrantless surveillance act

46 min.

The U.S. Senate Friday voted?overwhelmingly in favor of keeping a?George W. Bush-era surveillance law that will allow continued warrantless surveillance of Americans for the next five years.

The Senate's 73-23 vote on the Foreign Intelligence Surveillance Act (FISA) is an extension of the warrantless wiretapping law that grants legal immunity to telecommunications providers in order to continue to assist intelligence agencies with monitoring communications.

In addition to phone calls, text messages and emails may also be obtained by investigators for counterterrorism purposes, an easy assertion for law enforcement to make, Gizmodo reports.

The Electronic Frontier Foundation, an Internet rights advocacy organization, claimed in a statement that the act "allows the government to get secret FISA court orders???orders that do not require probable cause like regular warrants???for any emails or phone calls going to and from overseas. The communications only have to deal with "foreign intelligence information," a broad term that can mean virtually anything. And one secret FISA order can be issued against groups or categories of people???potentially affecting hundreds of thousands of Americans at once."

"Incredibly, the Senate rejected all the proposed amendments that would have brought a modicum of transparency and oversight to the government's activities," the EFF said?Friday?after the vote.

The bill is now headed for President Obama's desk where he is expected to sign it. Although an identical bill elicited contentious debate in 2008, a different political climate made passage much easier now.

"This is the last opportunity for the next five years for the Congress to exercise a modest measure of real oversight over this intelligence surveillance law," Sen. Ron Wyden,?D-Oregon, told the press before the vote. "It is not real oversight when the United States Congress cannot get a yes or no answer to the question of whether an estimate currently exists as to whether law abiding Americans have had their phone calls and emails swept up under the FISA law."

Wyden had introduced an amendment to the bill that would have forced the National Security Agency?to disclose how many Americans had been affected by FISA. Since 2009 the agency has refused to share that information on the basis that it would violate the privacy of those affected.?

Three Do Not's for Bathroom Renovation | Home Improvement ...

Bathroom like newWhen you finally commit to renovating your outdated bathroom, you might be feeling a mixture of emotions. You are excited to see the finished design, but you are worried about how long the project will take and what factors may cause delays during the process. While everyone hopes that their renovation projects go as smoothly as possible, it is very important to prepare for the worst and hope for the best. The best way to prepare is to know what mistakes you should specifically avoid making. Here are three ?do not?s? for bathroom renovation that you should keep in the front of your mind when you are planning and completing the project.

Starting the Demolition Before You Purchase or Choose All of the Products

It is common to want to get a jump start on the project by starting the demolition stage early, after all, if you have more than one bathroom you might be thinking that you can live without your master bath until the project is done. This is a major mistake that should be avoided until you select, purchase, and assure the delivery date of all of the new elements that will be installed in your updated bathroom. If you start to demolish things that do not need to be demolished, it will cost you time and money.

Failing to Install Updated Piping

If your home was built prior to 1975, you need to make sure that your pipes have been updated while they are accessible. A bathroom remodel is the perfect excuse to check your existing water supply piping and to replace all of the galvanized pipes that have not been updated. Failing to do this can cost you money and can turn a simple remodel into a major disaster later down the line.

Failing to Set Aside Extra Money

You set a budget before you even start to design what your new bathroom will look like. The budget will include the cost of new fixtures, piping, toilets, a shower, a bath, materials, and labor. But failing to set aside money to account for hidden damage is a mistake. It is very common for outdated bathrooms to have mold damage and dry rot around the tub and sink, so once they are removed, you may be in for a big surprise that you were not prepared to deal with.

If you want your remodel project to be done quickly, you need to take control of the project before it takes control of you. Consider the common mistakes that homeowners make, and avoid them at all costs.

Mexico's 'Bandito' President Challenges Arizona Immigration Law ...

By Javier Manjarres

speedy-gonzales-AA couple of weeks back, ?Mexico?s newly elected Presidente (Espanol for President) Enrique Pena Nieto, who happens to be a member of the ?Socialist political party, The Institutional Revolutionary Party (PRI), said that he ?fully supported? President Obama?s immigration reform policy, and ?Pena Nieto made clear that Mexicans were closely following Obama?s plan to tackle a major U.S. domestic issue ? fixing America?s immigration system.?-?Obama, Nieto Forge Amnesty Pact

Mexico?s Pena Nieto appears to be pushing the envelope against American sovereignty with his petitioning of the liberal U.S. 9th Circus (Circuit) Court of Appeals to ?uphold a lower-court ruling that blocked police from enforcing? a ban of harboring illegal aliens.

The Mexican government has filed a legal brief ?with the court asking them to uphold the lower-court ruling because it believed that??the ban harms diplomatic relations between the United States,? adding that it also ?undermines the U.S.?s ability to speak to a foreign country with one voice and encourages the marginalization of Mexicans and people who appear to be from Latin America.?

?As many will recall back in 2010, Presidente Obama aligned himself with Mexico in denouncing the Arizona Immigration law and called the controversial law ?a misdirected expression of frustration.?

?The United States and Mexico share a significant economic and political relationship that stands to be damaged the more the nations are at odds over immigration, which affects millions of people on both sides of the border.-Presidente Barack Obama (Newsmax)

Perhaps Presidente Nieto should worry less about U.S. immigration laws and worry more about his amigo Presidente Obama?s ?Fast and Furious? gun trafficking fiasco which has fueled the ongoing drug war and killings in Nieto?s beloved country? ?Viva Mejico!

Iraqi Sunnis stage big anti-government rallies

RAMADI, Iraq (Reuters) - Thousands of protesters from Iraq's Sunni Muslim minority poured onto the streets after Friday prayers in a show of force against Shi'ite Prime Minister Nuri al-Maliki, keeping up a week-long blockade of a major highway.

Around 60,000 people blocked the main road through Falluja, 50 km (30 miles) west of the capital, setting fire to the flag of Shi'ite Iran and shouting "out, out Iran! Baghdad stays free" and "Maliki you coward, don't take your advice from Iran".

Many Sunnis, whose community dominated Iraq until the fall of Saddam Hussein in 2003, accuse Maliki of refusing to share power and of being under the sway of its non-Arab neighbor.

"We will not leave this place until all our demands are fulfilled, including the toppling of the Maliki government," said 31-year-old Omar al-Dahal at a protest in Ramadi, where more than 100,000 protesters blocked the same highway as it leads to neighboring Syria and Jordan.

Activists' demands include an end to the marginalization of Sunnis, the abolition of anti-terrorism laws they say are used to target them, and the release of detainees.

Protests flared last week in Anbar province, the Sunni stronghold in western Iraq where demonstrators have mounted the blockades, after troops loyal to Maliki, who is from the Shi'ite majority, detained bodyguards of his finance minister, a Sunni.

Demonstrations were also held in the northern city of Mosul and in Samarra, where protesters chanted "the people want to bring down the regime", echoing the slogan used in popular revolts that ousted leaders in Tunisia, Egypt, Libya and Yemen.

The protests are likely to add to concerns the civil war in neighboring Syria, where majority Sunnis are fighting to topple a ruler backed by Shi'ite Iran, will drive Iraq back to the sectarian slaughter of 2005-7.

Militants linked to al Qaeda appear to be joining the ranks of Syrian rebels across the border and regrouping in Anbar, which was almost entirely controlled by militants at the height of Iraq's insurgency.

Security forces did not move to break up the protests, but prevented people from other provinces from heading to Anbar to join the rallies there.

REGIONAL DIMENSION

Speaking at a "reconciliation" conference broadcast on television, Maliki called for dialogue.

"It is not acceptable to express something by blocking roads, inciting sedition and sectarianism, killing, or blowing the trumpet of war and dividing Iraq," he said.

A masked protester who refused to give his name recalled the role of Anbar's tribes, first in fighting U.S. troops before allying with them to drive militants out - turning on fellow Sunni al Qaeda because of its indiscriminate use of violence.

"Just as we terrified the Americans with this mask, and kicked al Qaeda out, we will terrify the government with it," he said.

Highlighting the increasingly regional dimension, protesters in Falluja raised pictures of Turkish Prime Minister Tayyip Erdogan, who has lined up against Syrian President Bashar al-Assad and has sparred increasingly often with Maliki.

In Iraq's Shi'ite south, a small anti-Erdogan protest was held in the holy city of Najaf, 160 km (100 miles) from Baghdad.

Sunni complaints against Maliki grew louder a week ago following the arrest of Finance Minister Rafaie al-Esawi's bodyguards hours after Iraqi President Jalal Talabani, a Kurd seen as a steadying influence, was flown abroad for medical care.

For many, that was reminiscent of a move to arrest Sunni Vice President Tareq al-Hashemi a year ago, just when U.S. troops had withdrawn. Hashemi fled into exile and was subsequently sentenced to death in absentia.

Maliki has sought to divide his rivals and strengthen alliances in Iraq's complex political landscape before provincial elections next year and a parliamentary vote in 2014.

Woman charged with lying to FBI about Newtown scam

(Reuters) - A New York City woman who used her Facebook page to dupe donors into contributing to a "funeral fund" for one of the children killed in the Sandy Hook Elementary School massacre was charged with lying to the FBI, court documents showed.

Nouel Alba, 37, of the Bronx, used a Facebook page to pose as the aunt of one of the victims, 6-year-old Noah Pozner, and encouraged potential donors to contribute to a PayPal account in her name she had set up last February, according to court papers.

Alba, who made an initial appearance on Thursday before a U.S. magistrate in Connecticut, also claimed to have visited Sandy Hook school to identify the body of the boy, court records show, even though the school was an active crime scene closed off to parents.

When contacted by Federal Bureau of Investigation agents probing reports of fraudulent fundraising following the December 14 shooting, Alba claimed not to have posted any information related to Newtown on her Facebook account, or to have solicited donations or recently accessed her PayPal account.

Authorities also charge that she claimed falsely to have immediately refunded donations that she received.

She has been charged with a single count of lying to a federal agent, according to court papers. If convicted, Alba faces a maximum five years in prison and a $250,000 fine. She was released on a $50,000 bond.

Alba's next court appearance was set for January 16.

Her arrest on Thursday came roughly two weeks after police say 20-year-old Adam Lanza forced his way into the Sandy Hook school, killing 20 first graders and six staff members with a semi-automatic weapon.

Before the rampage, police say Lanza killed his mother, Nancy Lanza, at their home about 5 miles from the school. Lanza killed himself as police arrived at the school in response to 911 calls.

The massacre ranks as the second-deadliest school shooting in U.S. history after the 2007 shooting at Virginia Tech University in Blacksburg, Virginia, which left 32 people dead.

The public defender assigned to Alba's case did not immediately return a phone call seeking comment. Prosecutors with the U.S. Attorneys Office in New Haven did not return calls seeking comment.

Rules for Outsourcing Branded Content - PR 20/20

On June 29, 2012, WBEZ?s This American Life sparked a debate with no foreseen expiration date.

NewspapersProducer Sarah Keonig of WBEZ examined the relationship between the Chicago Tribune and its new content partner, Journatic.

An update from This American Life defined Journatic under the following terms:

?Journatic is a company that outsources labor to generate 'hyperlocal' news content for newspapers all over the country. To create this content cheaply, it uses offshore researchers and writers, especially from the Philippines.??

The episode states that Chicago Tribune writers were cast aside to allow for more (outsourced) content from Journatic. Not only did this ignite anger, but Koenig also revealed that Journatic writers were using fake bylines to sound more American. The reaction to the story was not a positive one.

On July 13, the Chicago Tribune announced the suspension of Journatic services after uncovering plagiarism in a story. ?And on July 14, the head of editorial at Journatic resigned.

As a result, other news organizations also decided to leave Journatic.

But, the story doesn?t end there!

On July 22, the Chicago Tribune published an article that discusses the ongoing struggle between large news organizations and quality?hyper-local journalism. After five months of investigation into Journatic article quality, and debate both within the Tribune and media community at large, the Tribune recently announced its decision to resume working with Journatic. However,?the Tribune will continue the partnership with renewed limitations, only using Journatic for informational pieces like listings.?

So the question remains ? What are the universal standards for outsourcing content?

The answer is simple. And complex. There aren?t any.??

In the spirit of traditional journalism, local news might not be the best place to outsource content. For many, local news is personal and emotionally meaningful.?

But what about business output? Following the above controversy, I decided to examine the nature of outsourcing in terms of business content.

When Should Your Brand Outsource Content?

?Content is king? has become something of a marketing mantra over the past few years. So, naturally, agencies and marketers alike are trying to find new ways to produce more content.

Between Google algorithm updates and perceptions in the marketplace (such as seen in the Journatic controversy) some might be apprehensive to try outsourcing at all. But, if done right, outsourcing can be beneficial for your business in the long run.

Before you outsource, define the ethical standards and business goals that are specific to your organization. In order to make a justified business decision, make two lists. The first will consist of content traits that you feel are prime for an outsourced team or writer. The other will list characteristics of content that must be written by in-house writers. Share these lists with all employees to stick to a uniform set of principles. When it comes to content, similar to the approach the Tribune took when it chose to re-engage with Journatic, it is key to analyze the purpose and nature of each piece before delegating items.?

Branded Content Outsourcing "Rules"

Outsourcing Rules

There are times when it?s unnecessary (and maybe even risky) to outsource content. Define these lines for your business and maintain that standard as you experiment with outsourcing.

If there is an intimate element to a topic, then it?s smart to give the content your own personal touch. But, if you must turn to outsourcing for business support?for example, if you don?t have the capabilities or resources in-house?you can outsource even intimate content, if you choose the right partner.

If you are under-staffed or searching for writing talent, don?t settle quickly. The right agency or organization can partner with your business and, over time, become an extension of your team. A trusted partner spends time getting to know your business and your industry in order to write efficiently and ethically. During the discovery process, be transparent, share industry resources and make time for interviews. It?s key to know that your writers not only know your industry, but also identify with your brand.

If you are able to find the right match, then outsourcing might look like a lot like insourcing.

In any case of outsourcing, you still need to serve in an editor role to make sure the content meets your standards, conveys the right feelings/messages and also is technically sound. If you choose to outsource all company content, be sure that someone is acting as editorial head in order to review (and make personal additions to) all content.

The Decision Behind the Dollar Sign

There?s no escaping the budget factors of outsourcing your content. If you decide to outsource, it?s important to analyze the relationship between price and quality. Generic writing from a stable of content farm freelancers might be cheaper, but is it really better? ?

Productivity and quality are key. High quality articles will make a stronger impact on prospective and existing customers, giving them a reason to come back. Plus, readers often share great articles they love with followers on social media, resulting in an added SEO boost. However, if content quality is low or obviously rushed, Google may purposefully penalize your site. Analyze the balance between content quality and quantity before allocating resources to an outsourced writer.

A well-populated, resourceful website is great; one that brings value with each article and asset is better. Strive to do both?with or without outsourcing.

How do you tackle content creation for your organization? Have you ever been burned by outsourcing? We?d love to hear the community?s thoughts on this important topic.

Get The Most Bang From Your Bubbly

Copyright ? 2012 National Public Radio. For personal, noncommercial use only. See Terms of Use. For other uses, prior permission required.

IRA FLATOW, HOST:

Don't clear the table just yet. We've got another helping of food science for you.

(SOUNDBITE OF CORK POPPING AND WINE POURING)

FLATOW: We've got some scientific advice on how to get the most bang out of your bubbly. Hmm. Tastes good. Up next, we're poring over the science of bubbles. Here are some facts to whet your appetite. Lipstick and champagne, they clash chemically. Frosted beer mugs, a no-no for flavor. And if you want to keep that open champagne fizzy, corking is not the answer. What is the answer? Well, here to explain is bubble master Dr. Richard Zare. He is professor of chemistry at Stanford University in Palo Alto, California. Welcome back to SCIENCE FRIDAY. Happy New Year.

DR. RICHARD ZARE: Well, thank you, Ira. Same to you.

FLATOW: Thank you very much. Let's go through some of these bubbleology(ph) tips for us. Do you have any tips for getting the most flavor and fizz out of champagne?

ZARE: Well, it turns out that as it warms up, you get more volatiles that come off when it evaporates. And that's, of course, very enjoyable because most of our taste comes from smell, not actually from inside our mouth.

FLATOW: So let it warm up a little bit before you drink that icy stuff.

ZARE: That's right. This also actually applies to beer, Ira. Let me mention some things. Many people drink beer just from the bottle. And while I understand how quickly that is to take in the beer that way, because as I mentioned to you, smell is involved, you just don't get much smell when you put a bottle to your mouth. Much better is to drink beer from a glass. Now, what type of glass? Well, many bars serve frosted glasses. They think that's quite fancy and wonderful. But actually, I think that's a bad idea, as does my friend Norman(ph) Metzger(ph) in Washington, D.C., who pointed this out to me. It turns out that if you cool liquids that contain gases, they really - the liquids dissolve the gases better and they - it is the gas coming off the liquid, which is part of the aroma, which makes, again, beer be so enjoyable to many of us. Now I understand that on a very hot day, nothing like a really cold beer. But in terms of taste, sipping from a glass that's cool is really quite wonderful.

FLATOW: Hmm. Now I understand, as I said before, I understand that as for lipstick, lipstick will kill the bubbles?

ZARE: Well, the bubbles are held together by this sort of membrane of various things that surround the carbon dioxide that's making the bubble. And when you add something like too much detergent, somebody doesn't really wash out the glass well or some people even rub their nose and then put their finger down.

(LAUGHTER)

ZARE: And this kills bubbles. And the oils - any type of oil, including the ChapStick, Vaseline, et cetera, will actually cause the bubbles to burst. It really destroys the surface tension - makes it uneven and the bubbles burst this way. So it's very interesting to see and it's very obvious on New Year's Eve, generally, women have less bubbles in their glass of champagne than men do for the obvious reason that women generally wear lipstick. On the other hand, this thing I just told you doesn't always work, because just like you can have second-hand smoke, Ira, you can have second-hand lipstick.

(LAUGHTER)

ZARE: So try it out.

FLATOW: I'll tell you. What a pick-up line for New Year's Eve. I am doing a scientific survey of the lipstick around here. Let me ask you a few questions about your lipstick and your champagne. There's an opening.

(LAUGHTER)

FLATOW: All right. Let's talk about having that open - you've now opened our bottle of champagne. You want to save a little bit for the morning after. What's the best way to save it? I know you have done experiments about the best way to keep the bubbles in a bottle of champagne fizzy til the next morning.

ZARE: Well, actually, Hal McGee and I - he's the Curious Cook who wrote a column for the New York Times with that subtitle, I think - looked into this. And the truth is the best way gas dissolved in your liquid is to keep the liquid cold. Anybody who's played around with water knows as you start to heat it up, it really drives the gases off. And hot water is much flatter and - so is any hot - any liquid. And it releases gas that way. So you really - to keep your champagne effervescent, you want to keep it cold. So returning it to the refrigerator or keeping it in an ice bucket is just the right thing to do.

FLATOW: You don't have to put the cork back in it or anything like it?

ZARE: You actually do not. There's enough carbon dioxide in the champagne to go on for many days. We've seen that. There's something else that's interesting that happens. If you leave the champagne uncorked, just like with wine, you get a change in its taste due to some oxidation from the air. And that actually can be quite pleasant too.

FLATOW: I bet you have spent many hours verifying that.

ZARE: Oh, it requires it. All in the name of science, Ira.

FLATOW: Of course.

(LAUGHTER)

FLATOW: But what about that trick of sticking a spoon down the neck of the champagne? Is that all just an old wives' tale?

ZARE: Well, from what I could tell, the only effect the spoon has, like a silver spoon is, if it helps cool the bottle down when you put it back in the refrigerator. Otherwise, I don't think it works.

FLATOW: Now, let's talk about the bubbles in your glass of champagne or your glass of wine because there's a whole bunch of physics going on there, isn't there? Let me start with...

ZARE: Well, a lot of chemistry too.

FLATOW: Of course. You're a chemist. You would be saying that.

(LAUGHTER)

ZARE: Let's consider how the bubbles get there in the first place or what goes on in champagne. I think it all starts with this Frenchman by the name of Dom Perignon who lived about 1639 to 1715 and developed this thing called the methode champenoise, where you take some type of wine and you bottle it again with sugar and yeast that causes second fermentation. And this yeast converts the sugar into carbon dioxide and ethanol - the alcohol we enjoy drinking. And he also, of course, have other things that are leftover from this. You get a couple of grams per liter of different other materials, like glycerol and tartaric acid and lactic acid, and it turns out that champagne is actually acidic. It has a PH of about three.

FLATOW: Wow.

ZARE: But if you look at the amount of carbon dioxide that's in the champagne, it's immense. You know, at sea level, the pressure of the air is one atmosphere. The amount of carbon dioxide in the bottle of champagne when you opened it, is something like seven atmospheres. It's loaded. It's super saturated. It wants to come out. And here's the problem: How do you get bubbles that come out? One of the same questions about how do you get clouds to rain. You need some form of nucleation, something to happen. And I need to tell you that most of champagne is actually just water, and water loves water.

Water loves water so much that it crushes little bubbles and you don't see bubbles ever form in the middle of a glass of champagne the same way you don't see bubbles form when you boil a pot of water and you look at it. The bubbles do not form in the center of the liquid. Instead, they form on the walls, on the side. Why? Because they need to hide and grow to a critical size. And they tend to actually form on various forms of, well, shall I call it dirt, fibers, dust, scratches in the glass, places to hide and build up to be a big enough bubble so we can escape and not be crushed by the water.

FLATOW: Hmm. Let me just interrupt for a second to remind everybody. I'm talking with Dr. Richard Zare on SCIENCE FRIDAY from NPR.

So that's why you see them forming in lines. They've been lining up in crack on the glass or they're coming off the sides and, I guess, you can revise or revive a stale glass of beer by nucleating it.

(LAUGHTER)

ZARE: Well, one of the simplest ways, but I don't recommend it of seeing this effect is to dump in a tablespoon of either sugar or salt into a carbonated beverage. You'll see a great deal of foam being formed.

FLATOW: Wow.

ZARE: Sand will work too. I don't recommend any of those three.

(LAUGHTER)

FLATOW: Well, does that explain why - in soft drinks, like, root beer, which has a lot of fizz inside of it? When you make a root beer float and you pour it on the ice cream, it just explodes with foam because the ice cream has all those little nooks and crannies in it?

ZARE: Yes. And ice cubes too. Let me talk about ice cubes for a moment.

FLATOW: Please.

ZARE: Have you ever noticed that when you pour any carbonated beverage on ice cubes for the first time, lots of foam. You drink it, then you say, I want a refill. The next time people pour on the ice - the same ice cubes, right?

FLATOW: Right.

ZARE: Much less foam. It's not that the bottle has gone flat. It's that the - all the sharp spots on the ice, the asperities on the ice have melted away. And without these little nooks and crannies, again, the carbon dioxide doesn't know how to escape. It wants to escape. It wants to go to one atmosphere. It just doesn't know how.

FLATOW: That would explain why I have heard about bartenders sprinkling some salt in your beer to make it foam up again.

ZARE: It does.

(SOUNDBITE OF LAUGHER)

FLATOW: Yeah.

ZARE: But try it. It works in champagne and beer. But I don't think that for purpose of taste is the thing to do.

FLATOW: Not at all. Now, let's talk about one of the - I once saw a video that you created about bubbles in a glass of beer that they don't always go up. The bubble seemed to be going down, and you tried this with what? And you...

ZARE: It was actually with Guinness beer.

FLATOW: Guinness? Famous for all those bubbles in there.

ZARE: That's right.

(LAUGHTER)

ZARE: And it's - at first, quite a puzzle and you wonder if people reported that the bubbles on the sides of Guinness - glass of Guinness beer were going down. How could bubbles be going down? Is it that they just had too much beer to drink? What's happening here?

FLATOW: Yeah.

ZARE: What's actually happening is that everywhere it's bubbling. But the bubbles in the center glass actually have less drag, less friction on them and they rise more rapidly, more easily than the ones on the side. And the result is they set up a circulation of the liquid. And bubbles are very slowly moving in beer. In fact, if you'll notice, champagne has more rapid moving bubbles than beer bubbles. And we could discuss why that is in a moment. But anyways, the result is that because of the liquid circulation, the bubbled go down initially...

FLATOW: Wow.

ZARE: ...in a glass of Guinness or some of the other very highly carbonated beers.

FLATOW: Well, one last quick question for you, Dr. Zare: Why are some bubbles bigger than others - depending on beverage? Is that what it is?

(LAUGHTER)

ZARE: Oh, I wish I understood all if this. Part of it has to do with the size of the cracker crevice that you have and it's been a mystery to me as to what controls, totally, the size of the bubble. I don't know the answer to that.

(LAUGHTER)

FLATOW: Well, we hope you enjoy finding that.

ZARE: More to learn.

FLATOW: Boy, (unintelligible).

ZARE: I shall study this.

(LAUGHTER)

FLATOW: Please, do that and maybe next year, we'll come back and talk to you again. Dick, have a Happy New. Thanks for joining us.

ZARE: And, oh, I get no kick from champagne. Mere alcohol doesn't throw me at all. So tell me why should it be true, Ira, that I get a kick from you. Thanks so much.

FLATOW: Thank you very, very much. Dr. Richard Zare, who is, I guess, he has day job, but he likes to do most is being a bubbleologist(ph). He's professor of chemistry at Stanford University in Palo Alto.
